From today's New York Times: a cheesemaker in Westcomebe, England who has installed a webcam that allows you to watch a big hunk of cheddar age. He's dubbed it Cheddarvision. You can see his site at:

I love cheddar cheese, it's one of my favorites. Sharp Cheddar from Cuba New York is the best. I like Buffalo cheddar and hte cheese curds from Helluva Cheese from NY too. I find Israeli (sp?) feta delicious. HHmmm cheese one of the best food groups!
